Abstract: The effect of various nitrogen and carbon sources on the biosynthesis of extracellular acid proteases by Penicillium roqueforti was followed. The enzymes were partly purified by (NH4)zSO4 precipitation and dialysis. At 26°C and initial pH 4.0, the largest enzymatic activity was obtained after 48 hours of growth in the presence of 0.15% of urea and 2.0% of Na-citrate in nutrient borth. © 1991 Science and Technology Letters.
